About this course:

This one day course will see you mastering your culinary skills, using the finest of British meats and poultry. You will be taught all of the essential skills and techniques on how to prepare, and cook, different cuts of meat; transforming them into the most delicious dishes

Techniques you will learn on the day:

– Step-by-step guidance on the intricate process of deboning a whole chicken leg

– Stuffing and rolling your chicken leg to produce a perfect ballotine

– The procedure of slow cooking, to produce a succulent venison dish

– How to make a beef en croute, including preparing your meat, as well as techniques for encasing it with pastry

– How to cook duck using a delicious honey glaze

– Presentation techniques that will exert extravagance, and impress all of your friends and family

You will learn and take home:

– Beef en croute with a delicately flavoured bearnaise sauce

– Chicken ballotine stuffed with sage and pancetta

– Honey glazed duck

– Slow cooked venison with port and juniper
